Japanese Fruit Cake
1 Box Duncan Hines cake mix
1 small box vanilla instant pudding mix
½ cup pecans – chopped
½ cup golden raisins
¼ tsp cinnamon
¼ tsp cloves
¼ tsp allspice Prepared Filling
Red and Green Cherries (optional)

Mix cake mix as directed on box adding the instant pudding mix. Pour 1/3 of the batter or a little more into prepared pan. To the rest of the batter, add the pecans, raisins, and spices. Divide this batter between 2 more prepared pans. Bake as directed on box or until done. This should leave you with three layers.

Filling
2 cups sugar
2 cups coconut (fresh or angel flake)
3 lemons - squeeze juice and grate some rind
½ cup lemon juice (bottle)

Cook over low or medium heat for 5-6 minutes. Cool a little and put on cake layers. Start with spice layer, then plain layer, then the last spice layer. Sprinkle coconut on top layer and add cherry halves (red and green for Christmas).
